How to make Colorful stir-fry vegetables with lemon sauce?

Ingredients

  • 1 bunch of chives
  • 1 organic lemon
  • 200 g sour cream
  • 250 g rice
  • 1 broccoli
  • 200 g mushrooms
  • 250 g cherry tomatoes
  • 1 onion
  • 2 tbsp rapeseed oil
  • 200 ml vegetable stock
  • salt
  • pepper

Preparation

Step 1

You need:

Ingredients:

1 bunch of chives 1 organic lemon 200 g sour cream

For the sauce, wash the chives and cut them into fine rolls. Wash lemon with hot water, rub dry and rub the peel. Then halve the lemon and squeeze out the juice. Mix the chives, lemon zest and juice with the sour cream and let sit in the refrigerator for 20-30 minutes.

Step 2

Ingredients:

250 g rice

Prepare rice.

Step 3

Ingredients:

1 broccoli 200 g mushrooms 250 g cherry tomatoes 1 onion

Clean the broccoli and cut it into small florets. Clean the mushrooms and cut them into quarters or eighths, depending on their size. Wash and quarter the tomatoes. Peel and chop the onion.

Step 4

Ingredients:

2 tbsp rapeseed oil 200 ml vegetable broth Salt Pepper

Heat the oil in a large pan and fry the onion and mushrooms. Add broccoli and deglaze with vegetable stock. Simmer for 5-10 minutes until the vegetables are cooked, add a little more stock if necessary. Just before the end of the cooking time, add tomatoes and season with salt and pepper.

Step 5

Serve the vegetable pan with lemon sauce.
